What is El Colmado?

El Colmado is a modern Spanish tapas & wine bar created by Chef Seamus Mullen, one of the foremost authorities on Spanish cuisine in the United States. “El Colmado” in Spanish means “the grocer,” referring to the small gourmet grocers found throughout Spain stocked with jamón, artisanal olive oils and vinegars. Chef Mullen offers a menu of both traditonal and creative Spanish fare, ranging in size from mordiscos (snacks), tapas (bites to share), and medias (small plates). Dishes include Spanish standbys like patatas bravas and Jamón Ibérico hand-carved right at the counter, dátil con béicon (dates wrapped in bacon), and our popular albóndigas (lamb meatballs). Our primarily Spanish wine list features wines on tap and a wide range of selections available by the glass, to encourage guests to explore and discover the excellent wines and sherries of Spain.

El Colmado at Gotham West Market

Our very first El Colmado is tucked inside pioneering food hall Gotham West Market in New York’s Hell’s Kitchen neighborhood. Featuring an 18-seat marble counter, open kitchen, custom-designed wine cabinet, and extra-large garage windows (which open up to create an outdoor sidewalk bar in the spring & summer), El Colmado captures the very essence of a classic Spanish tapas bar.

El Colmado Butchery

Our second outpost of El Colmado, the Butchery opened in March 2015 in New York’s Meatpacking District. A tapas & wine bar-meets-classic butcher shop, the Butchery is an all-day neighborhood spot featuring small plates and wine, rotisserie chickens, sandwiches and prepared foods, and a real butcher’s counter where guests can pick up fresh prime or off-cuts to cook at home, or have the chefs prepare right onsite. The Butchery is our humble homage to the colmados of Spain and the old-fashioned meat markets that used to be found on every corner in New York City.
